5pm sushi counter seating is first come-first served. 7pm and 9pm sushi counter seatings have a couple of reserveable seats available on Open Table. Any remaining seats are first come-first served. You may sign-up for available, same-day sushi counter seats in-person during business hours. Doors open at 5pm.
AND APPRENTICESHIP PROGRAM
As a 19 year-old high school graduate, an ambitious Kashiba left his home in Kyoto and embarked on his chef journey through an apprenticeship in Tokyo’s Ginza district. He was given no salary but was offered a room in the restaurant and a small living allowance.
Times have changed since then and apprenticeships are now integrated into the workplace as on-the-job training programs. Sushi Kashiba proudly offers training to aspiring chefs and welcomes dedication and enthusiasm for the craft.
